Gooey Skillet Brownie

Chocolate is absolutely the best indulgent yumminess in the world and this Gooey Skillet Brownie is no exception.  This recipe is super quick and so easy that my 8 year old daughter made it.  “Can we bake today?” is a question I get asked pretty often by my kiddies.  I am glad I was able to say yes and found this quick recipe for us to whip up during her break from virtual schooling.

 

I’m actually not sure how much she got done during her next school period as I am sure she had chocolate on the brain.  We topped the brownie with vanilla ice cream, toasted coconut and  maple pecans.  We were all grateful for this quick whip up.  It sure did hit the spot.  Just picture me, an 8 year old, a 6 year old and a 2 year old with spoons in our hands, standing around the brownie and going to town.  Now that’s quality time if you ask me.

 

YIELDS: 4 Servings
PREP TIME: 10 mins         COOK TIME: 15 mins        TOTAL TIME: 25 mins
 
Ingredients: 
¼ cup unsalted butter
  cup dark chocolate chopped (or chocolate chips)
 ¼ tsp instant coffee granules
 ½ cup granulated sugar
 2 eggs
 ¼ cup all purpose flour
 2 tbsp cocoa powder
 ¼ tsp baking soda
 ¼ tsp salt
 3 scoops of your favourite ice cream
Directions: 
1. Preheat oven to 350 degrees F
2. Heat a 10" cast iron skillet over medium heat. Add butter and remove from heat once melted. Add chocolate and stir mixture with a rubber spatula until chocolate is fully melted. Add coffee granules and continue stirring. Cool for 10 mins.
3. Add in sugar and whisk until smooth.
4. Whisk in eggs until fully incorporated.
5. With a wooden spoon, stir in the flour, cocoa powder, baking soda and salt until smooth.
6. Bake for 15 minutes on the center rack. Don't worry if the middle of the brownie seems under baked. If you want a less fudgy/gooey brownie, bake for an additional 5 minutes.
7. Cool for a few minutes, top with scoops of your favourite ice cream and devour.
