It’s a New Day!

So, things changed in the Murray world quite a bit since the COVID-19 pandemic. You know, things like online learning (a.ka. home schooling) for the older two kiddies, running after and entertaining a 2 year old, preparing for a 4th bundle. GIANT S’MORES COOKIES

 3 cups all purpose flour
 1 tsp salt
 1 tsp baking powder
 ¼ tsp baking soda
 1 cup cold unsalted butter, cubed
 ¾ cup granulated sugar
 1 ¼ cups dark brown sugar
 2 large eggs
 2 tsp vanilla extract
 1 ½ cups dark chocolate chunks
 1 cup cinnamon toast crunch cereal
 1 cup mini marshmallows

Preheat oven to 375 degrees F. Line 2 cookie sheets with parchment paper.

In a medium bowl, combine the flour, salt, baking powder and baking soda. Stir to combine.

In the bowl of a stand mixer, beat together butter and sugars on medium-high speed until fluffy.

Add eggs to sugar mixture and beat until fully incorporated. Then add in vanilla and beat until combined.

Add the flour mixture to the sugar mixture and stir until combined.

Stir in the chocolate chunks, golden grahams cereal and marshmallows until evenly distributed throughout the dough.

Divide dough into 12 equal parts and roll into balls. Place 6 dough balls on each cookie sheet.

Bake for 20 minutes or until cookies are brown around the edges and puffed up.
