It’s a New Day!

So, things changed in the Murray world quite a bit since the COVID-19 pandemic. You know, things like online learning (a.ka. home schooling) for the older two kiddies, running after and entertaining a 2 year old, preparing for a 4th bundle. This said, I am taking a break from ‘done for you’ and custom desserts until the fall. Joining the mailing list so you can be in the know about what’s coming soon. Giant S’mores Cookies

So, I know it’s Autumn but I don’t care.  I am not done with summer.  This giant s’mores cookie recipe will kick your cookie baking game up a few notches.  Whoever you share this batch of cookies with will fall in love!  See what I did there?  lol.  I just had to.

 

 

These giant s’mores ccookies are ginormous, ooey, gooey, and ginormous.  They are so ginormous, I have to type it twice.  I am a huge fan of gooey cookies, so these are absolutely fantastic.  If you want chewy cookies then leave them in the oven for a bit longer. 

 

The flavour combination of the chocolate, marshmallows and graham crackers will catapult you right back to your childhood.  While the marshmallows aren’t charred, this is the next best thing to S’mores.  Feel free to glamp out in your living room, turn to the fireplace channel and devour these bad boys.  Ok, maybe not.  Just whip ’em up and enjoy.  

Recipe adapted from Handle the Heat’s Giant Chocolate Chip Cookies

 3 cups all purpose flour
 1 tsp salt
 1 tsp baking powder
 ¼ tsp baking soda
 1 cup cold unsalted butter, cubed
 ¾ cup granulated sugar
 1 ¼ cups dark brown sugar
 2 large eggs
 2 tsp vanilla extract
 1 ½ cups dark chocolate chunks
 1 cup cinnamon toast crunch cereal
 1 cup mini marshmallows

Preheat oven to 375 degrees F. Line 2 cookie sheets with parchment paper.

In a medium bowl, combine the flour, salt, baking powder and baking soda. Stir to combine.

In the bowl of a stand mixer, beat together butter and sugars on medium-high speed until fluffy.

Add eggs to sugar mixture and beat until fully incorporated. Then add in vanilla and beat until combined.

Add the flour mixture to the sugar mixture and stir until combined.

Stir in the chocolate chunks, golden grahams cereal and marshmallows until evenly distributed throughout the dough.

Divide dough into 12 equal parts and roll into balls. Place 6 dough balls on each cookie sheet.

Bake for 20 minutes or until cookies are brown around the edges and puffed up.

Recipe Notes:

-Use graham crackers if you don’t have cinnamon toast crunch cereal

-Semi-sweet chocolate chips would also work well.
